The ingredients needed to make Stuffed Pepper with Goats Cheese:
- Get 1 of Pepper (any colour).
- Provide 75 g of Goats cheese.
- You need 50 g of boiled rice.
- Provide 1 clove of garlic.
- Get 1/2 of onion.
- You need 1 tablespoon of coriander.
- Prepare 1/2 tin of chopped tomatoes.
- Get of Salt and pepper.
- You need of Olive oil to fry and brush peppers.
Steps to make Stuffed Pepper with Goats Cheese:
- Ingredients.
- Cut Pepper in half, brush with olive oil and bake in the oven at 200 °C for 15 mins or until starting to colour.
- While pepper is cooking chop the onion and garlic and fry with a little oil for 5 mins.
- Add the tinned tomatoes to the onion and garlic and cook for another 5 mins on a medium heat.
- Add the cooked boiled rice, coriander, pinch of salt and pepper and cook for a further 2 mins.
- Spoon the mix into the pepper halves and top with the goats cheese. Cook for a further 15 mins at 200°c or until the cheese starts to colour and melt.
